Sugar Snap Peas with Mint

Ingredients

  • 2 teaspoons olive oil

  • 8oz sugar snap peas, trimmed

  • half a small sweet onion, diced

  • 1 clove garlic, chopped

  • ⅛ teaspoon salt

  • ⅛ teaspoon pepper

  • 1 tablespoon chopped fresh mint

Instructions

  1. Heat oil in a large skillet over medium heat.

  2. Add the sugar snap peas, onion, and garlic. Season with salt and pepper.

  3. Stir-fry for 4 minutes, then remove from heat and stir in the mint leaves.
