Rhubarb Chutney

Try on Pork Chops!


Ingredients

  • 1 ½ cups rhubarb

  • ¼ cup sugar

  • 3 tablespoon apple cider vinegar

  • ½ orange juice and zest

  • 2 tablespoon raisins or dried tart cherries

  • ¼ cup onion or 1 shallot

  • 1 teaspoon fresh ginger

  • ¼ teaspoon cinnamon

Instructions

 

  1. Cut the rhubarb into approximately ⅓-1/2 inch slices.

  2. Finely dice the onion and mince the ginger.

  3. Put everything in a wide non-reactive pot and bring to a simmer.

  4. Simmer for around 10 minutes until the mixture thickens, stirring occasionally.

  5. Set aside to cool.
