Stuffed Pepper Skillet

Ingredients

  • 2 bell peppers, chopped

  • 1 tablespoon olive oil

  • 1 teaspoon minced garlic

  • 1 pound ground beef

  • 1 large onion, chopped

  • 1 (14.5 ounce) can diced tomatoes

  • 1 cup water

  • 1 teaspoon basil

  • 1 teaspoon cumin

  • 1 tablespoon chili powder

  • salt and pepper to taste

  • 1 (15.5 ounce) can great northern beans, drained and rinsed

  • 4 cups kale, chopped

  • 1/2 cup sharp cheddar cheese

  • Parmesan cheese

Instructions

  1. Preheat oven to 350°F.

  2. In a large skillet, add olive oil and minced garlic over medium-high heat.

  3. Add onions, peppers and beef and cook until onions are tender and beef is browned.

  4. Add diced tomatoes, water, seasonings, beans and kale.

  5. Bring to a boil and then reduce to a simmer. Cook until kale is tender (about 10 minutes).

  6. Stir in cheddar cheese.

  7. Bake for 20 minutes in skillet or in a casserole dish.

  8. Sprinkle with Parmesan cheese before serving.

  9. Optional serve with tortilla chips or wrapped in tortillas.
