Stuffed Pepper Skillet
Ingredients
2 bell peppers, chopped
1 tablespoon olive oil
1 teaspoon minced garlic
1 pound ground beef
1 large onion, chopped
1 (14.5 ounce) can diced tomatoes
1 cup water
1 teaspoon basil
1 teaspoon cumin
1 tablespoon chili powder
salt and pepper to taste
1 (15.5 ounce) can great northern beans, drained and rinsed
4 cups kale, chopped
1/2 cup sharp cheddar cheese
Parmesan cheese
Instructions
Preheat oven to 350°F.
In a large skillet, add olive oil and minced garlic over medium-high heat.
Add onions, peppers and beef and cook until onions are tender and beef is browned.
Add diced tomatoes, water, seasonings, beans and kale.
Bring to a boil and then reduce to a simmer. Cook until kale is tender (about 10 minutes).
Stir in cheddar cheese.
Bake for 20 minutes in skillet or in a casserole dish.
Sprinkle with Parmesan cheese before serving.
Optional serve with tortilla chips or wrapped in tortillas.
