Sea Beans (salicornia) are succulent, salt-tolerant plants that grow along the beaches of the Pacific Northwest. With their balance of salty and fresh flavor, they make a deliciously unique side dish that compliments and enhances many other foods.
Given their shared maritime heritage, sea beans are a particularly good pairing with fish and other seafood. They are wonderful when quickly blanched or steamed and coated with butter or olive oil. Sea beans are also great for pickling!
